The Bo Ssäm is a pork wrap popular amongst koreans. The Ssäm bar is one of the Momofuku restaurants owned by Chef David Chang. This slow roasted pork shoulder is cooked for 6-8 hours with frequent brushing of a brown sugar and kosher salt sauce. More details here. It was absolutely yummy!

The rice came along with servings of pretty bibb (butterhead family) lettuce and some sauces. The lettuce was the prettiest green veg I've ever seen :) The sauces included the full-bodied ssam sauce, aged kimchi, and scallion sauce which reminded me much of Singapore's chicken rice.
How to eat Bo Ssäm?
1. Grab a pretty leaf of the bibb lettuce
2. Add some plump korean rice
3. Add some sauce psst. I really liked the ssam and kimchi combination :)
4. Add some of that slow roasted smokey full flavoured meat and some of that brown sugar crunch
5. Finally, wrap the lettuce up and chomp on your Bo Ssäm!
The lighting makes the meat look freakishly red. It wasn't red (if you're wondering why it looks raw), but rather a lovely deep pink. The tender meat comes off in ribbons and you can hardly find the bone cos its small relative to the size of that slab of meat. The dark charred parts are to die for! The crust is the result of repeated brushing of brown sugar and kosher salt. Its like some kind of caramel candy!
I assure you those were not 'tiny-sized' thongs. This is a huge meal! We shared this amongst 8 people and there was still a substantial amount of leftovers to takeaway. Oh but, you'll have to order this meal in advanced so do plan ahead :) Don't miss this if youre down in NYU area!
