Oxtail and Foie Gras Terrine with Poached Leeks

This was one crazy soup. Oxtail soup and some seared Foie Gras to top it off. Mind-blowing yumminess! No one would have thought these two would go so well together! It was indeed very rich and creamy and I enjoyed the combination of flavours alot!

Mmm. The bone marrow was creamy and I loved how the mild flaviour of the shallot confit complemented that creaminess perfectly. Oops shaky picture, I must have been anxious to dig in.

Awesome dry-aged beef! Prior to this, I've never had dry-aged beef. This burger set the standard for all dry-aged beef to come. With each bite I took, juices oozed from the patty. The patty was cooked so well that the centre was very slightly pinkish but the top and bottom still retained its moisture. Its as if someone prepared a patty and sliced all its hard parts away leaving a very tender and evenly cooked patty.  

So, what is dry-aged beef? According to what I've gathered online, its beef that's been hung to dry for several weeks. You'll think ew. decomposed meat? No its prepared in carefully controlled conditions so that the enzymes in beef can work and cook the meat, breaking down the connecting tissues and concentrating the flavour, resulting in an absolutely tender and flavour packed slice of meat. Fabulous! :) YUMs. 

The food served here is awesome! I'd definitely go back again if I'm in NYC. :) Best burger ever!
